Biryani made with chosen spices is my favorite food, and I even ordered a Biryani chef for my wedding reception. In fact, we saved money by not buying each other wedding rings and put that saving to our wedding catering - how obsessed were we!

Though Biryani takes much time to prepare, just the name of this dish brings smiles to almost every Indian.

Mostly made on the weekends as it is high on fat and protein content, this delicacy is available in many varieties which is made from chicken or mutton or beef or camel and any other meat, which mainly depends on the locality you are in and of course, availability. There is a vegetarian version of biryani too. Biryani is famous for its depth of taste which makes one to sink in it. The ingredients itself are so chosen to add such an aroma that you can't just ignore it.

This dish has its history of being adopted from Mughal Emperor's cuisine. No matter what its origin or the history behind the chosen spices,it is widely available in many other forms with slight variation in its spices and in different names. Served usually with onions dipped in curd or aubergine curry these side dishes just adds more water to the mouth.
